Happy Sunday, friends! I hope everyone has had a great weekend. Today has been a lazy one as I have been soaking up this extra hour we’ve got and catching up on Revenge! I wasn’t the best at taking pictures this week, but I promise to step up my game. Without further ado, onto a peek into my week!
Monday
I was not feeling well, so I took off from work. It is NO fun having to be teach classes and be peppy at work when you are feeling under the weather. I felt achey and completely exhausted all last weekend, so I decided to extend my weekend to fully kick this sickness in its butt! I spent the day snuggling with Winston before heading to a doctors appointment later in the afternoon.

Every Monday night, my roommate and the two girls who live above us do Monday dinners together. Each week, one of us rotates and we cook dinner and drink wine and just catch up. It’s sad how fast the weeks can pass and us not see each other, so we decided to add in these dinners so we make sure we stay caught up with each other’s lives. This past week, my friend Jennifer cooked this amazing meatloaf her mom used to make her and her family growing up. Talk about the ultimate comfort food!
Tuesday
I still wasn’t feeling 100%, so I stayed home again. I had the sick days, so why not use them?! I had cabin fever, so later that evening, I met up with my friends Meig and Amanda for wine and tapas at Bistro La Bon in the Plaza Midwood area of CLT. Meig and I are big wine drinkers, so we have been trying to hit up local spots that do half-priced bottles of wine, and on Tuesday nights they have discounted bottles. The wine was great…as expected 🙂 I wasn’t up for food, but the food Meig and Amanda got shared incredible. They got the Tapenade Trio and the Grilled Octopus. I will be going back!
Wednesday
It was back to work for this gal! I got to work at 6:30am which was a little more rough than usual considering I was able to sleep in the 5 days before. My day consisted of teaching a Circuit class- my other 2 classes were no-shows! I spent my day responding emails, finalizing some work for a incentive challenge starting Monday (tomorrow), and prepping for the upcoming month.
After work, I came home and did some things around the apartment before heading to my other job. I teach a Pilates class Wednesday nights at a local neighborhood clubhouse.
After class, I came home and Elise (my roomie), Elizabeth (friend who lives above us), and myself headed to Michael’s to grab some things for Halloween!
Thursday
Winston hadn’t been feeling well for the past few days (throwing up after each meal), so I took him to the vet early in the morning before heading into work at noon. It ended up being an upset stomach from some leaves he was eating from these bushes our apartment complex just planted, so thankfully nothing serious! He also had an ear infection so he had his ears cleaned.
Side note- Winston LOVES the vet. It’s hilarious. He runs to the front door and runs up to everyone he sees inside. When the vet inspects him, he manages to weasel right into her arms. He’s shameless.

After I got off work, I met Elise at Goodwill to get some gear for our Halloween costumes. Our costume plans had changed suddenly, so we had to find something or else we didn’t know what we were going to do. Luckily, when I arrived, Elise had snagged some great dresses that we would use to create our Native American costumes. We spent all night cutting our dresses and making fringe and tying beads onto the fringe. We spent a few hours doing this; our fingers were sore the next day! Haha!
Friday
I woke up at around 7 to head to a group exercise class at a local church. My co-worker, who teaches the class, is moving to Atlanta (*insert sad/crying face*) so I may be picking up this class when she leaves. The ladies in the class were so nice and welcoming; I hope it all works out!
Work was not too shabby either. It wasn’t too hectic and I taught a Halloween-inspired Boot Camp class (will be posting it this week!). I also ate my body weight in candy. It. was. glorious.
When I got home, I immediately started getting ready for the night and Elise and I finished up our final touches on our costumes. Considering we got it all together in such short notice, they turned out really well!

We headed to a friend’s house that night for a Halloween party. By the time we left, I was so exhausted I slept the whole cab ride home. I clearly can’t hang. #wipedout
Saturday
The majority of Saturday consisted of sleeping in, Chick-Fil-A, and Netflix. I managed to stop being a bum to run some errands and stop by a local mall to shop for some more pants. H&M is a dangerous place to go fresh after payday. I ended up finding these comfy maroon skinny jeans that I cannot wait to break in! After the mall I met up with friends Meig and Amanda for sushi. Considering I was yawning all throughout dinner, I opted out of going out and stayed in and watched a movie with Elise and her boyfriend. Wild night, I know.
Sunday
Today was FREEZING but it was nice to sleep in with the extra hour. When I woke up, I made my favorite breakfast as of recently: toast with mashed avocado topped with a friend egg and hot sauce. I only had one avocado (that was partially bad), so on my other piece of toast I used a Laughing Cow queso fresco wedge. SO good!
I spent the morning with the roomie, her boyf, and her brother playing Mario Kart before heading to the dog park. Winston had a ton of energy that just needed to be let out!

After the dog park, I whipped up a batch of the Hummusapien’s Autumn Spiced Chili and her Vegan Zucchini Banana Chocolate Chip muffins. It is so hard to not eat all of the muffins fresh outta the oven. I also made the chili for a Monday night dinner and it was a HIT! If you haven’t checked out her blog, you NEED to do so! I am spending tonight getting ready for the week ahead and [possibly] seeing my friend’s brand new pug puppy. CAN. NOT. WAIT.
